Preheat oven to 350 degrees Fahrenheit. While dough is rising, heat a medium saute pan over medium-low heat and melt 2 tablespoons of butter. Add in apples, 1/2 cup of brown sugar, 1 teaspoon of cinnamon, and crushed pecans. Cook for 5-10 minutes or until apples have softened.

Place the rolls into a greased 7×11 inch baking dish. Cover with the plastic wrap and let rise for 30 minutes. Preheat oven to 350 degrees F. Place the cinnamon rolls into the oven and bake for 30 - 40 minutes until the tops are golden brown and when you gently tug on the center rolls, it doesn't look doughy.

While the dough is resting, make the filling. In a small bowl, combine the cinnamon and sugar together. In a medium saucepan on medium heat, add butter and brown sugar until caramelized, toss in diced apple chunks. Add lemon juice, cinnamon, cloves, ginger and nutmeg, salt and stir together allowing to come to a boil.

Wrap in cheese cloth and squeeze the excess liquid out of the apple shreds. Roughly chop the pecans.
