I'm forever the person who finds a lot of Trader Joe's desserts on the too sweet side, so I expected these Trader Joe's Shortbread Sandwich cookies with Raspberry Filling would be too much for me. Much the way those Strawberry Shortcake cookies were a sugar bomb. But I gotta tell ya, for me, these are darn near perfect for a store-bought cookie. The shortbread is thin, crisp but not too.
