Roast for 45 minutes until vegetables have browned. Remove dish from the oven and using a rubber spatula flip the vegetables. Top with sliced halloumi cheese. Turn the ovens broiler on low and broil until cheese has melted and turned brown, approximately 5-10 minutes.

In a small bowl, stir together 1 1/2 tablespoon of olive oil and oregano. Slice the Halloumi cheese into 1/3- to 1/2-inch slices. Brush the marinade over both sides of the halloumi.

Heat a thick bottom frying pan over medium heat and toast the sesame seeds for around 1 minute until colored. Remove from the pan, making sure you wipe out any stray seeds.
