Mock Pineapple Zucchini Ingredients. You will need the following to make a pineapple zucchini recipe: 16 cups shredded or chopped zucchini, washed and peeled. 46 ounces sugar free 100 percent pineapple juice. 3 cups sugar (you can reduce to 2 cups or use Splenda or 3 tsp liquid stevia) 1 1/2 cups lemon juice.

Cut your zucchinis lengthwise, use a spoon and scrape out seeds from the middle. Cut peeled zucchini into ½-inch cubes or, shred for crushed zucchini pineapple. COOK Combine zucchini, sugar, pineapple juice, and lemon juice in a large saucepan. Bring mixture to a boil, stirring until sugar dissolves. Reduce heat to a simmer (180°F). Simmer 20 minutes, stirring to prevent sticking. FILL Pack hot zucchini and juice into a hot jar, leaving ½-inch headspace. Remove air bubbles.

Reduce heat to low and simmer for 20 minutes. Prepare jars and fill with hot mixture up to ½-inch headspace.

Cube zucchini for chunk or shred for crushed pineapple. The shredded with fill less jars then chunk. Place the shredded zucchini in a strainer for 15 minutes. Squeeze out excess water. Or place the cubed zucchini in a strainer and lightly salt, toss and let sit 20 minutes. Then rinse and drain weel twice. Dry with papare towels.
