Sauté rice: Add rice, garlic and lemon zest and sauté for one additional minute. Stir in chicken broth, water, lemon juice and all seasonings.

Heat oil over medium heat in large saucepan or small pot. Add garlic and onion. Cook for 5 minutes or until translucent and sweet. Add rice and stir until rice turns mostly translucent. Add broth and water. Place lid on, bring to simmer then turn heat down to low. Cook for 12 minutes or until water is evaporated.

Add the tempering oil to the rice in the mixing bowl and toss just until evenly combined. Over-mixing will damage the rice texture. She gave me the recipe for it-Do the regular Indian seasoning in two tbsps oil with curry leaves, mustard seeds, lots of cumin seeds, some lentils andslit green chilies.
